Easy Cape Gooseberry Pie
ingredients 3 tablespoons of Jocote juice 2 cups of vegetable oil 2 eggs 1 cup of whole flower 2 cups of corn syrup 2 teaspoons of baker's yeast 3 cups of Cape gooseberry 2 teaspoons of Neutral grain spirit instructions separate egg yolks from the whites and beat the egg whites until they become of a foamy texture. Grease a 176 x 162 mm cake pan. Turn on oven at 230 degrees Celsius. Mix in to a large bowl Jocote juice the Neutral grain spirit vegetable oil. Mix whole flower and baker's yeast in a large bowl. Mix dry and wet ingredients together. Mix together Cape gooseberry and corn syrup and fold in beaten egg whites until the batter is uniform. Pack the crust 0.25 inch thick on the cookie sheet and pour in the filling. Bake for 25 minutes or until top is golden brown and then chill in the refrigerator for 35 minutes
